Strawberry Tofu Mousse Pie

3 oz box Strawberry flavored gelatin
1 C Hot water
2 Tbsp Lemon juice
10 oz Silken (soft) tofu
8 oz Non-dairy whipped
1 prepared 9" Graham cracker pie crust
Fresh strawberries and additonal whipped topping for garnish (optional)
Cooking Instructions
Combine strawberry gelatin, hot water and lemon juice in a bowl. Stir to dissolve gelatin and refrigerate for 20-30 minutes until slightly thickened.
(NOTE: If you forget to take the gelatin out of the refrigerator until it's hardened, you can melt it over low heat again before continuing with recipe).

Meanwhile, put the tofu in a strainer and press gently to as much of the liquid as possible.

Beat the tofu, gradually adding the whipped topping. Fold in the gelatin and stir until smooth. Pour into graham pie crust and refrigerate for 3-4 hours until firm.

Garnish with fresh sliced strawberries and whipped topping for a garnish.
Additional Comments
This pie is super easy to make and doesn't require baking. The texture will be like a firm mousse. No one will know it's made of tofu unless you tell them! This pie would be good for lactose-intolerant people.

You can use any flavor gelatin, but keep the lemon juice in the recipe.
