1 1/2 C Wheat flour
1/2 C Rice flour (mochiko)
1 1/2 C Water
2 Eggs
2 tsp crushed Garlic
1/2 tsp Salt
5 oz Green onions (scallions), cut in 1-inch pieces
2 tsp Vegetable oil
8 oz raw Calamari (squid)
16 oz fresh Shrimp
2 oz Oysters (optional)
8 oz Surimi (artificial crab meat)

Dipping Sauce:
2 tsp Shoyu mixed with
2 Tbsp Vinegar (I use Japanese vinegar),
1 tsp Sugar
1 tsp Red pepper flakes (or kim chee paste
2 tsp Sesame seeds (or 1/2 tsp toasted sesame oil)
Cooking Instructions
Clean and cut up all seafood into bite sized pieces and set aside. To make batter: In mixing bowl, combine flour and mochiko, water and eggs, and with your hands, mix gently. Then add the seafood and scallions to the batter. In a frying pan over medium heat, add 1/2 tsp of the vegetable oil to coat the bottom of the pan. When the pan has heated, spread a layer of batter over the whole bottom of the pan. Cook until batter is not liquid anymore (can turn over and brown on the other side, too). Continue this step until all batter is used. Should make 3-4 10" sized jun.

Mix all ingredients for the dipping sauce well.
Additional Comments
This would also taste great with chopped kimchee on top if you don't want to use seafood. Great for pupus when cut into pieces (like pizza).
