8 ounces fresh Bean sprouts (washed)
1 C canned Chinese or Chop Suey vegetables (drained)
1 lb fresh Spinach
1 C Sesame seed oil
1/2 C Soy sauce
4 Tbls Lemon juice
3 Tbls grated Onion
5 Tbls Sesame seeds lightly toasted in 350 degree oven for about 15 minutes
1 tsp Sugar
1 tsp Black pepper
1 C thinly chopped Water chestnuts
Cooking Instructions
Soak bean sprouts and Chinese vegetables in cold water until crisp. Drain thoroughly. Wash spinach in several changes of cold water until it is clean. Cut off tough stems. Dry leaves thoroughly. Chill. In a bowl, combine oil, soy sauce, lemon juice, grated onion, sesame seeds, sugar and black pepper. Let dressing stand for at least one hour. Arrange spinach leaves in a salad bowl, top with bean sprouts and Chinese vegetables. Over these, arrange water chestnuts. Pour dressing over salad and toss thoroughly.
Additional Comments
This may be prepared a day ahead by keeping spinach in paper towels to absorb moisture. Change towels once or twice a day. Vegetables may also be kept in a water-filled container and drained when needed. Serves 12
