Mongolian Beef with Vegetables

Ingredients
1 lb Sirloin or flank steak (cut into thin strips ... easier if da meat is partially frozen)

Marinade:
1 Egg white
Pinch of Salt
1 tsp Sesame oil
1 Tbsp Cornstarch

Vegetables:
4 Green onions, sliced on da diagonal into 1-inch pieces
1 8oz can Baby corn
1 Carrot, peeled and sliced on da diagonal into 1/4" thick coins
1 Green pepper, diced into 1/2" squares
1 Garlic clove, minced
Sauce:
3 Tbsp Hoisin sauce
2 Tbsp Water
1 Tbsp Dark soy sauce
2 tsp Rice vinegar
1/4 tsp Chili paste, to taste
1 tsp Sugar

Oil for frying beef
2 T oil (peanut or vegetable) for stir frying
Cooking Instructions
Slice da beef across da grain into thin strips (easier if meat is partially frozen). Add da marinade ingredients in order given and marinate da beef for thirty minutes. To prepare da veggies, wash da green onions and slice on da diagonal into 1-inch pieces. Peel carrot and slice on da diagonal into 1/4" thick coins. Wash, deseed and dice da green pepper into 1/2" squares. Wash and drain baby corn. Peel and mince da garlic. Mix together da sauce ingredients and set aside. When beef has finished marinating, heat wok and add oil to cook beef. When oil is hot, add beef and fry until cooked. Remove beef from da wok and drain on paper towels.

Clean out da wok with paper towel and add 2 T peanut or vegetable oil for stir frying. When oil is hot, add garlic and stir fry briefly. Den add carrot and green pepper and cook until slightly tender but still crunchy. Add da baby corn and green onions. Make one well in da middle of da wok by pushing da veggies up da side. Add sauce and bring to a boil, stirring to thicken. Stir in sugar. Add back da beef and combine sauce and vegetables and beef together. Serve over rice. Makes 4 servings.
