1 box lumpia wrappers
1 Egg (separated)
1 lbs ground pork or turkey
1 tbls minced garlic
1/2 C carrots sliced (1 inch strips)
1 box julienne cut frozen green beans (rinse in colandar under running water until it separates)
1/2 lb. bean sprouts
1/4 C sliced green onion
Salt & pepper to taste
Shoyu to taste
Oil for frying
Cooking Instructions
Brown meat in wok or large pan to stir fry; drain. Add garlic, carrots and seasonings. Remove from heat and toss in bean sprouts and green onion being careful not to wilt the sprouts. Place in colander. Beat egg with a tablespoon of water in bowl and set aside. Measure 2-3 tablespoons of meat filling and spread on to the middle of the lumpia wrapper. Fold like a burrito and roll. Seal with egg mixture. As you roll lumpia, place them on a cookie sheet covered with waxed or parchment paper. When you complete a layer (approx. 1 dozen,) place cookie sheet in freezer to set them so they will not stick together. Heat oil to 375 degrees and fry lumpias until golden brown. Stand fried lumpias in colander with absorbent paper towels. If not fried properly, your lumpias will come out soggy. Eat warm with La Choy's Sweet and Sour sauce or white vinegar with a couple crushed cloves of garlic.
Additional Comments
We like to have a lumpia-thon and make dozens of them. We wrap lumpias in foil or ziplock bags and freeze. When haole friends come ova' we fia up da deep frya.
