2 Tbsp Canola oil
4 lbs Pork butt, cubed
10 garlic cloves, sliced
1 Tbsp pickling spice
Hawaiian Salt and pepper to taste
2 Hawaiian chili peppers, chopped
cup Japanese rice vinegar (or cider vinegar)
1/2 C Soy sauce
1/2 C water
3 Tbsp Sugar, honey or sweetener
4 Tbsp Fish sauce
3 large bay leaves
1 Tbsp Peppercorns
1 small potato (diced very small like garlic)- it will thicken the sauce later
Cooking Instructions
In a large pot, heat oil and add cubed pork. Brown pork for 5 to 10 minutes. Then add garlic, salt and pepper, to taste. Cook until you can smell the fragrance of the garlic. Next, add the rest of the ingredients . Cover and cook on medium low for about an hour.
