Ingredients
1 C Cake flour
1 tsp Baking powder
6 Eggs, separated
1 tsp Cream of tartar
1 C Sugar
1 tsp Vanilla
1/2 C Vvegetable oil
Cooking Instructions
Preheat oven to 350 degrees F. Grease muffin cups or line with paper baking cups. Sift flour with baking powder and set aside. Beat egg whites with cream of tartar until foamy but not stiff. Gradually beat in the sugar, vanilla and oil. Then beat in the egg yolks, one at a time. Finally, gradually beat in the flour and baking powder mixture.

Fill the muffin cups with batter. Bake 12 to 15 minutes or until a pick inserted in the center of a cupcake comes out clean.

Makes 18-24 cupcakes

These are super easy to make and virtually fail-proof. Serve with fresh fruit.
