2-3 lb Chuck Roast or Brisket cut into 1 1/2" pieces
2 round Onions, quartered
4 Carrots cut into 2" pieces
4 Celery stalks cut into 2" pieces
2 Potatoes cut into 2" pieces
1 large Taro cut into 2" pieces
6-8 Luau leaves, break into pieces
Thumb sized piece of Ginger
4 cloves Garlic
Hawaiian salt
1-pkg Dashinomoto (No MSG)
1 can Stewed Tomatoes
1 can Tomato soup
Cooking oil
Chicken or Beef Broth (your preference)
2 Bay leaves
Cooking Instructions
Season meat with salt & pepper, coat with cornstarch and brown in large pot with ginger and garlic. Add broth to cover meat, stewed tomatoes, tomato soup, dashinomoto & bay leaves. Bring to boil then down to simmer for 1 hour. Skim off excess fat and add vegetables. Bring to boil then simmer for 1 hour or till meat is tender and vegetables are cooked. Add more broth if needed. Adjust taste by adding salt. Thicken with cornstarch & water to your consistency.
Additional Comments
I like it soupy so I don't thicken it too much. Serve with Lomi Salmon and Poi
