4 C grated Cassava
2 Eggs
1 1/2 C Sugar
2 cans Coconut milk
8 Egg yolks
1 C Sugar
1 can Evaporated milk
1 tsp Vanilla
Cooking Instructions
Drain grated cassava in a colander until dry or until there isn't any liquid present, at least 2 hours. Mix cassava, sugar, eggs and coconut milk until well blended. Place mixture in greased 9x13" pan and bake at 350 degrees for 45 minutes to one hour until top is lightly browned. Mix topping ingredients together (egg yolks, sugar, evaporated milk and vanilla) and pour over baked cassava. Bake at 300 degrees for another 30 minutes or until topping mixture is slightly firm. Let pan cool before cutting bibingka into pieces.
Additional Comments
This bibingka is made in the Philippines, where cassava is plentiful. If you can't find fresh cassava roots, look for frozan grated cassava, which can be found in all Asian markets.
