5 lb Chicken thighs
1 1/2 C Mustard
3 C Flour
1 Egg
4 Tbsp Salt
2 Tbsp Black pepper
Oil for frying
Cooking Instructions
Rinse chicken well and set in a strainer to drip or pat chicken dry so there is no extra water to water down the mustard. Place chicken in a large mixing bowl and season it with salt and pepper. You may add more if needed. Beat the egg and mustard together. Pour mustard and egg mixture on chicken and mix well. Make sure the mustard is covering the chicken pieces. Place the flour in the same bowl and toss chicken around the flour to coat. Heat oil in a large frying pan. I like to use a wok but any thing you have for frying will do. Make sure oil is hot enough before placing chicken in pan. You can do this by sprinkling a pinch of flour into the oil. If it frys immediately the oil is hot enough. Fry chicken till juices run clear when pierced. When your done cooking the chickens place in a bowl lined with napkins to suck up the oil.
Additional Comments
It may be served immediatly but do not cover till cooled of the chicken will not be crispy. This dish is usually served with Guam's red rice, potato salad,and a hot sauce we call finadene.
