Blackened Ahi Quesadilla

1 sashimi block of ahi (any ahi fillet is fine, the sashimi block is easier to cut)
2 C Jack cheese
1 can Black beans
Large Flour tortillas
1/4 C Butter
Sour cream (optional)
Guacamole (optional)
Salsa (optional)
Any cajun seasoning. I use:

1/2 Tbsp paprika
1/4 Tbsp chili powder (add the taste)
1/4 Tbsp salt
1/4 Tbsp garlic salt
1/2 Tbsp pepper
1/2 Tbsp oregano
1/2 Tbsp savory (optional)
Cooking Instructions
Mix the spices. Roll the ahi sashimi block and coat well and evenly with spices. Heat up pan and melt butter, and then sear the ahi, about 1-2 minutes on each side (Varies on how rare you want it. You can look on the far left of the ahi block to see how well it is cooking). Remove ahi block, and slice into 1/2 slices along the natural lines of the fish for best cut. Heat up beans in a small pot on the stove. Put a tsp of butter into a pan, cook tortilla for 30 seconds-1 minute on one side or until the side down starts browning, flip, add cheese, spoon some black beans, and lay some ahi slices along one half of the tortilla. Fold tortilla over, remove from pan, and repeat. Serve with guacamole, salsa and sour cream.
Additional Comments
I feed 3 with this, you can add fish and other ingredients depending upon how many you are feeding. Work quickly once you get the quesadilla in the pan, so as not to burn it. Ultimately, cook to taste, it's really hard to mess up this dish so don't hesitate to add or remove ingredients!
