Easy Pineapple Shrimp Skewers

1 1/2 to 2 lbs of cleaned large Shrimp
5 Tbsp Soy sauce
2 tsp minced Garlic
1 can Diced pineapples ( prefer Dole...but fresh is even better!)
Paprika is optional.
1 package Bamboo skewers
1 pinch Black pepper
2 Tbsp Sugar; brown sugar is also good
1/2 tsp ginger; one sliver of fresh is even better
Pepper flakes for some heat if you like!
Cooking Instructions
In a large bowl combine soy sauce, garlic, black pepper, sugar, and half the juice from the can of pineapples. Add cleaned shrimp and 1/3 of the pineapples to the mix. Mix until shrimps are fully coated. Let it sit or marinade for as long as possible. But 1/2 an hour is suffice if you're in a hurry. Next, place one shrimp on the skewer vertically then add a piece of pineapple. Keep alternating until the skewer is full. Usually fits 3 to 4 shrimps. And don't pack them too tightly! They are now ready for the grill or broiler. Place them on giving them an inch space to cook. Cook for ten minutes flipping them occasionally. They are ready when they turn red. Keep the left over marinade. Use it to baste the shrimp skewers. ENJOY!!!
Additional Comments
Instead of shrimp you can also use chicken and for vegetarians you can use tofu. The recipe allows you to add whatever you want. Add bell peppers or onions if you like...its all up to you!
