3 lbs Beef shortribs or brisket w/bone
1 round Onion, small, diced
1 stalk Celery, small, diced
Plenty Taro leaves
2 cans Chicken broth
Hawaiian salt to taste
2 Tbsp Oyster sauce
Thumb size Ginger
2 Tbsp Cooking oil
1 pkg Dashi (I use the one with no MSG)
Cooking Instructions
Cut meat into 2in. cubes. In large pot brown onions and celery in oil till carmelized. Add meat, salt, ginger, oyster sauce. Cook till meat browns. Add chicken broth, dashi and enough water to cover meat. Add all the taro leaf you want and cook till tender. I break up the taro leaf as I add to pot. Should be about 2 hrs. Make luau as soupy as you like by adding chicken broth or water. Taste as you cook and add more salt if needed.
