1/2 box Angel hair pasta
1 lb Pork (or more)cut into small square strips approx. 1/2 inch thick, 1 - 2 inches long
4 cloves Garlic, sliced
1 medium Onion, sliced
1 Bay leaf
5 dried Shitaki mushrooms rehydrated and cut into strips
4 tsp Hoisin sause
2 Tbsp Vinegar
2 Tbsp Soy sause
1 tsp Salt
1 tsp Black pepper
Cooking Instructions
Cook angel hair pasta in boiling water for approx. 4 mins. Cool under cold water immediately. Pasta should be al dente (very slightly hard, not soft & mushy). Saute in a wok or large pot, garlic, onion, bayleaf until onions are transluscent or slightly clear. Add pork. After pork is browned, add vinegar, soy sause, hoisin sause, salt and black pepper. Cover and cook 5 mins. medium heat. Add rehydrated shitaki strips and cook another 5 mins. There should be liquid in the wok or pot, if not add water slowly until you can barely see liquid boiling through your ingredients. Lower temp. to low and gently fold in pasta little at a time making sure everything is mixed well but without mushing up pasta. Cover and let simmer for 5 mins. Toss before serving.
Additional Comments
This recipe was made in the attempt to recreate a pancit dish once served at the Mabuhai Cafe on Hotel St., Hon., Oahu, HI. We would go there almost every Sunday for dinner when I was a small kid. The recipe comes pretty close and reminds me of eating with GramPa.
