1 medium head Lettuce, shredded 1/2 C minced Green onion 1 bunch Chinese parsley (cilantro), chopped 1/4 C thinly sliced Celery, optional 1 package (3oz.) Fried won ton strips 1/4 C chopped Roast peanuts 1 lbs cooked Boneless chicken breast, shredded 1/2 C Char siu, julienne, optional
Sesame Vinegar Dressing:
2 Tbsp toasted Sesame seeds 1 tsp Salt 1/2 tsp Pepper 1/4 C Sugar 1/3 C Rice vinegar 1/4 C Salad oil
Combine lettuce, onion, Chinese parsley and celery in a large bowl; toss to mix well. Sprinkle with won ton strips, peanuts, chicken and char siu. Combine ingredients for sesame vinegar dressing; mix well and pour over salad just before serving. Variation:
