1 large Ham shank (or ham hocks)
1 large Portugese Sausage
1 can Kidney beans(do not drain)
1 large Onion
2 stalks Celery
2 Potatos
2-3 Carrots
1/2 head of Cabbage (cooked)
1/2 bag Elbow macaroni
1 pkg Lipton onion soup mix
2-3 Bay leaves
1 can Tomato sauce
1 tsp Nutmeg
Salt and pepper to taste
Cooking Instructions
In a large pot, add ham shanks and cover with water. Boil until meat falls off the bones (about an hour). Remove bones from stock, add more water, lipton onion soup, potatoes, onions, carrots, celery, bay leaf, nutmeg. Cook on medium for about 45 minutes. Add kidney beans, cabbage and tomato sauce. Cook on low for about 15-20 minutes. Add macaroni let cook for another 10 minutes. Add salt and pepper to taste.
Additional Comments
Serve with rice or portugese sweet bread. This recipe can feed about 6-8 people. It is even better the second day!!
