1 16 once can Cooked pumpkin
2 Eggs, slightly beaten
3/4 C Sugar
1/2 tsp Salt
1 tsp Ground cinnamon
1/4 tsp Ground cloves
1/4 tsp Ground mace (optional)
1 13 oz can Evaporated milk
1 1/2 C Shredded coconut (optional)
9-inch Unbaked pie shell
1 pkg (2 1/2 oz) Haupia pudding mix, or if making haupia from scratch 1 C from batch (put the rest in a shallow and cut in squares when cold and hard)
1 C Heavy cream, whipped and sweetened (optional)
Cooking Instructions
Preheat oven to 425 degrees. In a large bowl, combine the pumpkin and eggs. Add sugar, salt, and spices. Stir in evaporated milk and 1 c. of the coconut. Pour into pie shell. Bake for 15 minutes. Lower heat to 350 degrees and bake about 40 to 45 minutes or until filling is set. Cool. Prepare haupia pudding mix according to package directions (note: if you make haupia from scratch, you will need about 1 c. of the finished haupia...put the rest in a shallow pan and chill and cut into squares and serve separately). Cool slightly, then pour over pie. Sprinkle with the remaining shredded coconut (optional) and whipped cream. Makes 8 servings.
