1/2 lb Salt pork
1/4 lb Ham
2 cloves Garlic
1 Tbsp Achiote fat
1 Green pepper, chopped
1 Onion, chopped
1 Tomato, chopped
1/2 Sweet red pepper, minced
1/4 tsp Dried oregano leaves
1 sprig Chinese parsley (cilantro), chopped
1 sprig Parsley, chopped

Achiote Fat Ingredients:
1 C Achiote seeds
2 C Salad oil
Cooking Instructions
In a small saucepan, combine seeds and oil. Cook over low heat for about 5 minutes or until oil has rich red color; strain. Store in refrigerator until ready to use. Dice salt pork and ham. With a mortar and pestle, grind garlic; set aside. In a small saucepan, heat achiote fat; saute pork and ham. Stir in green pepper, onion, tomato, red pepper, oregano, and parsley; cook 10 minutes. Stir in garlic and cook for 5 more minutes. Makes 3 cups.
