2-3 lbs Chicken breast, boneless, skinless, or any part you like best
1 whole Garlic clove, cut into large pieces
1 medium piece fresh Ginger root, cubed
10-15 Sweet Maui onions, cut in quarters
10-12 C Water
1/3-2/3 C Shoyu (Soy Sauce for you haoles who don't know)
1 Beer (at least half, n/a okay for those who don't drink)
2-3 C Sticky rice
Cooking Instructions
Combine all ingredients except rice in a large pot. Cook, uncovered on medium for about 1 hour, or until chicken is cooked through, skimming the foam off the top.Check chicken for doneness (no blood).If fully cooked, cover and simmer over low heat for another 1/2-1 hour or until the chicken starts looking kinda brown from the shoyu. Put rice in bowl, enough for one person. Place chicken on top of the rice. Using a soup ladle, pour stock from the pot on top of the rice, avoiding the ginger and garlic. Now EAT!!
