3 C Red beans (dry kine)
1 small Onion, sliced
1 clove Garlic, cut fine
1 large Potato, diced
1 Tbsp Shortening
1/8 tsp Pepper
1/8 tsp Paprika
1 dash Cayenne pepper
Salt to taste
1 can Tomato sauce
2 quart Water
1-2 Tbsp Lemon juice
1 small head Cabbage
2 small Chili peppers (optional)
1/2 C Macaroni
1/2 lb Portugese sausage
1/2 lb Ham bone or ham hock
Cooking Instructions
Cook beans in plenty of water until done. Add onion, garlic, diced potatoes, salt, pepper, shortening, and cook for 15 minutes more. Add 2 quarts water and lemon juice. Mix and boil until vegetables stay well done. Add the cabbage (chopped up)and macaroni to the beans and then cook it for about 15 minutes before other vegetables are added. Let cook fo at least another half hour on low heat or until all is done.
Additional Comments
This was one of our ohana's favorites during New Years and those rainy cold nights up in the Palolo mountains. You can add more salt if you like once you make your bowl.
