1 package of rice noodles - Found in the oriental section of any supermarket.
1 lbs. of skinless and boneless chicken - Cut into 1-inch cubes.
3 large eggs - scrambled
1/2 cup Phad Thai sauce - Found in the oriental section of any supermarket.
1 oz Peapods
1 oz Bean sprouts
1/4 C Water
1/2 C Peanuts - salted or unsalted

1/4 C peanut butter
1 Tbls ground ginger
Cooking Instructions
Using a colander, soak the rice noodle in pot of cold water until the noodles are soft. Approx. 1/2 hours. Drain the noodles and set aside. In a Wok or a large skillet on medium heat, add a tsp. of oil and cook the chicken until done. Add in the scrambled eggs and cook until done. Mix in the pea pods and bean sprouts for 1 minute. Add in the noodles, Phat Thai sauce, and water. Mix continuously until noodles become translucent. Approx. 2 to 5 minutes. Serve hot with a topping of peanuts. Mix the peanut sauce with the Phad Thai.

In a sauce pan, heat the peanut butter until melted. Add water to assist the melting process. Approx. 2 to 4 Tbls. Stir in the ginger. The end result should be a thin sauce. Enough that it would pour out of the pot. If the sauce is still thick, add more water.
