1 1/2 Tbsp Sesame oil
2 cloves Garlic, minced
1 Onion, diced
3 Tbsp Flour
1 1/2 C Dashi or stock of your choice
2 tsp Hatcho miso
1/4 tsp Salt or to taste
1/4 tsp Basil, dry
1 Tbsp Mirin or sake
2-3 Tbsp Parsley, fresh
Cooking Instructions
Saute onion and garlic in sesame oil, add flour and make a roux. Add stock, stir until thickened. Thin miso in 1 tsp warm water and add, along with salt, basil, mirin or sake and parsley. Stir and simmer until blended, about 10 minutes. Serve over rice or steamed vegetables.
Additional Comments
Very old recipe from Japanese family in countryside south of Nagoya.
