Marinade: 2 C Water 1 C Shoyu 5 Tbsp Sugar 1 tsp Ginger, chopped
1 Tbsp Garlic, chopped 1 Tbsp Green onions, chopped 1/2 C Round onion, chopped 1 tsp Sesame oil 1 tsp Sesame seeds 1/8 tsp Red chili pepper flakes
Using the point of a knife, make many holes in both sides of flank steaks. Combine marinade ingredients, bring to boil, lower heat, simmer 45 min. Let cool, marinate meat a few hrs., preferably overnight. Grill or broil to desired doneness, 6~8 min. per side for med.- rare. Let rest 5 min., halve the flanks steaks lengthwise. Slice against the grain, holding knife at an angle, into thin slices. Can heat marinade, thickened with cornstarch for additional dipping. Note: Same sauce can be used for all beef, pork and chicken.
I make it for our office BBQs we have here, and it is always requested each time by the Okinawan folks. As one of the dishes of a lunch, I make 8~10 flank steaks for the 50~60 people. And the recipe has been requested by many.
