2 med Onions, diced
1/2 C Minced celery
4 large cloves Garlic, minced
A little bit of Oil
64oz Northern Beans (dried kine but prepare before starting recipe)
8oz diced Green chilies (can ok but get real, real hot kine)
2 Tbsp Coriander
2 Tbsp White pepper
2 tsp Cayenne pepper
Tops of celery, onion peel, sliced jalapeno, salt and pepper for seasoning
4-5 lbs Whole chicken
1 lb Ground turkey
Cooking Instructions
In large pot, place chicken and "for seasoning items" with water and boil till meat pulls from chicken easily. Pull meat from bones, dice or shredded to your liking and set aside. Strain and reserve stock. Prepare dried beans as instructed on package. Sauté' ground turkey with the onions, minced celery and garlic. Add spices, beans, green chilies and diced chicken; Add strained and reserved stock too simmer. Simmer for 2 hours so continue to add stock slowly. As always "to taste". If like mo spicy add mo' da kine. When serving top with diced Roma Tomato or julienne jalapeno or "whateva" for color
Additional Comments
Great for tailgate, pau hana party, etc. Always to taste and can make dis da dey b-foa and reheat slow kine (NO burn da bottom)
