Dry Apple's Oxtail Stew

2 lbs Oxtail, cut at joints {May substitute with beef brisket}
1 large Kula onion (coarsely chopped)
2 large Potatoes
2 Carrots
1 large Branch of Celery (cut into 1" pieces)
1 12oz can Tomato paste
tsp Black pepper
2 tsp Hawaiian sea salt
1 tsp Oregano
3 large Garlic cloves
1 Tsp Sugar
Cooking Instructions
Place meat in a large pot. Add water to cover meat. Add all ingredients except potatoes and carrots. Boil 3 -3 hours or until just tender, stirring frequently to prevent from burning. Add more water as needed while boiling. Add potatoes and carrots and cook until vegetables are done. To store, cool and refrigerate. Skim off excess oil before warming. Serve over rice or with poi, and/or pineapple coleslaw. Servings: 4
