5 lb Chicken, skinned & de-boned, cut in quarters
2-3 Tbsp Curry powder
1 C Oyster sauce
1 Tbsp Sesame oil
2 15oz cans Coconut milk
4 stalk celery diced
1 large Onion diced
4-6 Clove garlic
1/2 block Butter
1-2 Tbsp Corn starch mixed with water for thickening
Cooking Instructions
Massage oyster sauce into chicken (no scared use your hand) followed by sesame oil. Prepare and refrigerate over night. Brown chicken and simmer till cooked. Drain fluid, add coconut milk, curry power, and sauté ingredients. Bring to boil then simmer. In a separate pan, sauté onion and celery in butter and garlic till translucent. Option: You can thicken you coconut curry sauce with corn starch as needed. You can also sprinkle thin slices of leaf onion over your curry dish before serving.
