2 1/2 C Ripe Mangoes (Sliced)
2 Tbsp Lemmon juice
1 Tbsp Butter
1/3 C Brown sugar
1/4 C Shortening (Crisco)
1 large Egg
3/4 C Granulated sugar
1/2 C Milk
1 1/4 C All purpose flour
1/4 tsp Salt
2 tsp Baking powder
Cooking Instructions
Preheat oven to 375 degrees F. Pour lemon juice over Mangoes and let sit for approximately 15 minutes. Melt butter in a 8 inch baking pan and be sure to spread it evenly to include the sides of the pan. Sprinkle brown sugar, covering the entire bottom. Now, cover the brown sugar with the Mango slices. To make the batter mix: cream the shortening (Crisco or like substitute), add the granulated sugar and cream together, then add the beaten egg. Sift dry ingredients and add alternately with milk. Once the batter is completed, pour over the slices of Mangoes and bake at 375 degrees for 50 - 60 minutes. When cake is done flip pan over on flat dish and remove cake so Mangoes will be facing upward. Serve while still warm with whipped cream.
