12 slices Stale white bread
3/4 C Chopped dried mango, about the size of raisins (not the one with Li Hing Mui)
6 Large eggs
1 C Milk
1 C Milk
1 C Cream
3/4 C Sugar
1/4 tsp Ground nutmeg
1/4 tsp Cinnamon
1 tsp Vanilla
Cooking Instructions
Soak chopped mango in 1 cup "Boiling" water for 2 minutes, drain, set aside. Heat oven to 350 degrees. LIGHTLY grease or spray a 13 X 9 glass baking dish. Line baking dish with lightly buttered bread slices, arrange in several layers (I only put 2 layers) prinkling chopped mango between each layer. Beat eggs in a large bowl until light & foamy. Whisk in milk, sugar, nutmeg, cinnamon and vanilla until well blended. Pour egg & milk mixture over bread. Press down gently with a spatula. Let stand for about 30 minutes, so the bread softens and absorbs some of the liquid. Bake in 350 degree oven for 35 to 40 minutes or until the custard is set. Let the pudding stand for 15 minutes before serving.
Serving Suggestions:
I usually serve Whip Cream or ice cream with this, but it is ONO just as is. Hope it becomes your Ohana's favorite
Additional Comments
To my family, bread pudding is comfort food. I have always made it for gatherings, and with the mango added, it makes it so "Special". When I have a party, people always asked if I will make the "Mango Bread Pudding."
