Ingredients
Extra virgin olive oil
1 Large onion chopped finely
2-3 Glove garlic finely minced
4 Potatoes (Russet or baking), medium diced
2 Qts + 1 C Chicken stock
Pinch of crushed red pepper flakes
1/2 lbs Kale
1/4 C Italian parsley chopped
Sea or kosher salt
Fresh pepper
Cooking Instructions
In a heavy pot, sauté onions in olive oil for 4 minutes. Add garlic and stir about 30 seconds. Throw in a pinch of red pepper flakes cook briefly, then add potatoes. Pour in chicken stock bring to a boil then reduce to a simmer until potatoes fall apart. Use an emersion blender and puree the potatoes. Let it simmer, meanwhile chiffonade the kale and set aside. The soup should thicken up. Taste it and adjust seasoning with salt and pepper. Cut the sausage at an angle about 1/4 inch  thick and fry in a pan. Place the kale in the soup and continue to simmer. Once all the sausage has been fried place then in the soup and simmer for 15 minutes more. Add the parsley, taste the soup and again adjust the seasoning. Serve with crusty bread.
