1 quart daikon/radish, peeled and sliced crosswise about 1/4 inch thick 2/3 cup sugar 2 Tbsp vinegar
2 Tbsp Hawaiian salt (or a little less) Few shakes dried red pepper (optional, to taste) Yellow food coloring (optional)
Mix sugar, vinegar, salt, pepper, and food coloring. Add to the daikon and mix until all daikon slices are coated. At first the mixture will appear dry, but after a few hours the moisture will come out from the daikon. So, DO NOT ADD any water to this.
