Ingredients
4 small Chinese dried black mushrooms
1/4 lb. raw shrimps
1/2 lb. ground pork
7 canned water chestnuts, diced
1/4 cup bamboo shoots, diced finely
2 green onions, finely chopped
1 tsp. fresh grated ginger root
1 tsp. rice wine
1 tsp. salt
1/2 tsp. sugar
1 Tbsp. soy sauce
1 tsp. oyster sauce
Dash of white pepper
1-1/4 Tbsp. cornstarch
1 egg
1 pkg wonton wrappers
Soup for wonton:
6 cups chicken or vegetable stock
1 tsp. rice wine
1-1/2 tsps. soy sauce
1 Tbsp. grated ginger root
Heat all above ingredients to boiling
Ladle soup stock into bowls of wontons and noodles

Garnish with these into each individual serving bowl:

1/4 tsp. black pepper
1/2 tsp. sesame oil
1 Tbsp. chopped green onion
4 snow peas trimmed
2 slices of Kamaboko (fish cake)
4 slices BBQ pork (char siu)
1 hard boiled egg sliced in half
Cooking Instructions
Boil Chinese mushrooms for 10 mins., rinse, squeeze dry, cut off, and discard stems; then, finely chop into small pieces. Shell, devein and wash shrimps. Chop into small pieces. Chop water chestnuts into small pieces. Combine mushrooms, shrimps, water chestnuts, pork and green onion. Add all other ingredients and mix well. Use 1 tsp. of filling for each wonton wrapper. With one corner of the wrapper toward you, place 1 tsp. filling about an inch from the corner. Moisten fingers in warm water and moisten two edges of the wrapper then fold it in half into a triangle shape. Moisten two outer points of the triangle then press them together. Place the won tons on a plate dusted with cornstarch to prevent sticking. Cook the wontons in rapidly boiling stock for 5-7 mins. or until inside appears cooked through the wrapper. Remove the wontons from the stock with a slotted spoon and place in individual bowls. 1/2 lb. fresh Chinese egg noodles or (12 oz. pkg. dried)Parboil fresh egg noodles for 3 mins. Rinse with cold water and drain. Follow package directions for dried noodles. Drop noodles into hot water. Stir for a min. to heat. Drain and place in bowl with wontons.
