2-3 Ham Hocks
2 Large Portuguese sausages
1 Large Maui onion
3 Russet potatoes
2 Carrots
1 8 oz can tomato sauce
2 cans kidney beans
Cooking Instructions
In pressure cooker, add the ham hocks and sliced Maui onion, cover with water and cook for 45-50 minutes. Remove from stove, run cold water over pot to cool and release pressure. Add 2 whole Portuguese sausages to pot, cook for an additional 15 minutes. Remove from stove and cool to release pressure. Add entire contents to a large pot, add 1 inch cubed potatoes and 1/2 inch diced carrots. Simmer for 10 minutes, add entire contents of the 2 cans of Kidney Beans, simmer for an additional 10 minutes. While still boiling, thicken if you like with water and corn starch mixture. Taste best the following day, just like a good stew. Great served over rice.
