 Would add 1T or more mesquite or other liquid smoke. Cooking longer on lower gives a more authentic texture. After the meat has cooked, drain and freezer chill the juices and skim the fat-- by then the meat should be cooled enough to shred fine (pulled pork barbecue)-- and add enough warmed juices back to keep the meat moist and flavorful. Kalua pork and cabbage is a great dish for leftovers.

 Afta pau cook on low & shreaded, I put da liquid smoke, so da house no smell.
