 This is da' one! I've looked high and low for "Big Island Style" smoked pork recipes on the net, only to find endless variations of Kalua Pig.

The secret to this recipe is balancing the shoyu marinade with just enough sugar, garlic, ginger and Hawaiian Chili Pepper to your taste. Also, I lomi in a little Hawaiian (Sea) Salt before I marinade it for that extra burst of flavor. Then smoke the pork for about 4 hours on VERY LOW heat, using water-soaked Mesquite (Kiawe). It helps to use a few charcoal briquettes to start and keep the fire going.

I've done this recipe many times using a (slightly modified) 22-1/2" Weber kettle grill and it comes out AWESOME every time.

No forget fo' fry da' meat little bit "papa'a" and serve 'em with Poi - 'Das da' only way fo' eat Big Island Smoke Meat.. Winnahz!
