Macaroon Lemon Syrup Cake

1/2 C Butter (1 stick)
1 C Caster sugar (superfine sugar)
2 C Dessicated coconut
1 C self-raising Flour
4 Eggs
Lemon Syrup:
1 C White sugar
2/3 C Water
6 strips Lemon rind
Cooking Instructions
Cream the butter and sugar until it's light and fluffy. Beat in the eggs. Stir in the coconut followed by the sifted flour. Spread batter into a round baking pan and bake in a 320 degree oven for 45 minutes. Do not remove the cake from it's pan until after the syrup is poured on it and it has completely cooled.

Combine all of the lemon syrup ingredients in a saucepan and stir it over low heat until the sugar dissolves. Once the sugar is dissolved, bring it to a boil, reduce heat, and simmer uncovered without stirring for 3 minutes. Strain the syrup, pour it over the hot cake, and cool it in the pan.
