Ryki's Black Bean Chicken w/Shiitake Mushrooms

3.5 lbs fresh chicken Breast cut into strips or cubed)
4 1.8 oz package Sauce for Black Bean Chicken (Lee Kum Kee)
1 oz. Sliced Shiitake mushrooms, dried
3 oz. whole Shiitake mushrooms, dried
1/2 large Onion, chopped
2 cloves Garlic, crushed and chopped
Ginger (small portion, depends to your liking, chopped)
Olive oil
1 Red bell pepper, optional
1 Green bell pepper, optional
Cooking Instructions
In a large bowl, soak both packages of shiitake mushrooms and set aside. In large skillet, fry the garlic, ginger and onions in a little olive oil until they are browned. Then add the chicken and fry until brown. Transfer ingredients from skillet to a deep dish pot. Add two cups of water from soaking mushrooms, add the package of black bean chicken sauce and let come to a boil, while stirring. Chop whole mushrooms into halfs and cut off stems. Throw into pot the sliced and chopped shiitake mushrooms, bring to a boil, add remaining of water from the shiitake mushrooms to where it is a sauce and not into a soup. Add bell peppers, let simmer, and serve.

Serves a family of 4 or two hungry adults.
