Seafood Salad

Ingredients
1 lb Squid
1 lb Shrimp
1 Cucumber
3 stalk Celery
1/2 head Garlic
1/2 med Onion
2 Tomatoes (roma kine best)
2 lg Green onion
1/3 bunch Cilantro
Sauce:

1 Tbsp Lemon juice
1 tsp Fish sauce
2 tsp Sugar
1 tsp Soy sauce
1/2 tsp Salt (delete if you got really salty fish sauce)
1 tsp Chili paste
Cooking Instructions
Clean squid and cut into bite size pieces. (if you donno how, can buy pre-cleaned, but donno if you can get da tentacles. Peel and devein shrimp - I like use the big ones. Bring large pot of water to boil, cook shrimp and squid separately, small batch at a time, plunge into ice water immediately to stop cooking and keep from getting tough. (squid should only be cooked about 15-30 seconds - JUST till it turns "whiter" and starts to set up) Julienne de-seeded cukes and celery ribs, chop green onion, peel and slice garlic, thinly slice onion, de-seed and large dice tomatoes. Throw all veggies together and add sauce about 2 hrs before serving. Toss in the seafood about 15 min before serving and roughly chop cilantro for the top. (I just rip em up wif my hands - I like cilantro!!!) You can add chopped fresh red peppers if you want, and play wif the sauce if you need to - all fish sauces are not alike.
Additional Comments
If you have leftovers (yah, right!) drain the old sauce out and add new sauce before serving - the tomatoes bleed into the sauce and water it down - just personal preference. I even go so far as to pick out and throw away da old toms and add new ones, but hey - I am lolo.
