Chicken Long Rice

1 Chicken (fryer approx. 4-5 lb.
3-4 (7.75 oz)Long rice
1 Round onion
Thumb size piece of ginger
2 cloves Garlic
1 15 ounce can Stewed tomato
2-4 cans Chicken broth
2 Tbsp Oil
Green onion for garnish (optional)
1 .2 ounce pkg package Dashinomoto (optional) Oriental bonito flavoring
Cooking Instructions
Soak long rice in warm water in a large bowl. Chop chicken into bite sized pieces, brown in pot with oil over high heat. Season with salt and pepper, add finely chopped garlic and ginger and slivered round onion. Once browned, add enough water to cover chicken add dashinomoto, stewed tomato and 1 can chicken broth. Bring to boil and turn down to a simmer for 20 min. Once chicken is cooked add drained long rice and additional chicken broth to consistancy you want. Remember long rice will soak up liquid so add chicken broth, salt and pepper to taste and consistancy you want. Garnish with chopped green onions.
