Red Potato Salad

5 Red potatoes
4 lg Eggs or 5 med
1/2 med Maui onion finely minced
1 Carrot finely grated
1 stalk Celery finely minced
1 C Imitation crabmeat broken into small pieces
Best Foods mayonaise
Cooking Instructions
Place potatoes and eggs in pot with enough water to cover them and add a pinch of salt. Bring water to a boil then turn down heat and simmer till potatoes are fork tender. Drain and place in refrigerator till cooled. Peel potatoes and cube. Shell eggs and chop finely. In large mixing bowl combine potatoes, eggs, crabmeat and all minced vegetables. Add Best Foods mayonaise till you get the consistancy you want. Taste first and add salt and pepper to taste. Place in serving bowl sprinkle paprika on top to garnish.

This recipe will serve 10 people. Usually 1 potato for 2 people. Enjoy
