Best Carrot Cake

3 C grated Carrots
2 C Flour
4 Eggs
2 C Sugar
1 1/2 C Vegetable oil
1/2 C chopped Pecans
1 tsp Cinnamon
1 tsp Baking soda
1 tsp Salt
1 tsp vanilla
Topping (optional)

4 oz Cream cheese
1 1/2 C powdered sugar
1 tsp Vanilla
2 tsp Milk
Cooking Instructions
Preheat oven to 350, in a mixing bowl combine all first 10 ingredients (in order) and mix together. Then pour into a buttered 10 x 14 rectangular cake pan and bake for 45 minutes. While the cake is baking combine cream cheese, powdered sugar, vanilla and milk to the consistency of icing. When cake is cooked and cooled frost the cake with the icing.
