Banana Chocolate Chip Muffins

Ingredients
1 C All-purpose flour
1 C Mochiko flour
1 1/2 tsp Baking soda
1/2 tsp Salt
4 overripe Bananas
1 C Brown sugar
3/4 C (1 1/2 sticks) Butter, melted and cooled
2 Eggs
1 tsp Vanilla
1 C Chocolate chips
Cooking Instructions
Preheat oven to 375 degrees. Combine both flours, baking soda, salt and set aside. Beat bananas with brown sugar really well. Like you mean it! Add melted butter, eggs, vanilla and mix well. Slowly add dry ingredients, careful not to over mix. Coat the chocolate chips with some flour, this will help it not sink to the bottom, and fold into batter. Line muffin pan with cupcake liners. Fill with batter halfway. Tap on counter to release air bubbles. Bake for 18 minutes or until toothpick inserted comes out clean. Enjoy!

Some people might think Mochiko flour? But the Mochiko gives this muffin an almost Mochi like texture. The original recipe called for 2 cups all-purpose flour but one day I only had 1 cup. So I used 1 cup Mochiko and it really worked and tasted better!
