Mango Banana Bread

2 c. flour
2 tsp. baking soda
1 tsp. baking powder
2 tsp. cinnamon
1/2 tsp. salt
3/4 to 1 c. sugar
1/2 c. oil (canola is best)
1/4 c. butter or margarine, melted
1/4 c. nuts, chopped (optional)
1 tsp. vanilla
2 c. ripe mangoes, chopped coarsely
1 overripe banana, chopped
3 eggs, beaten
1/2 c. raisins (optional)
1/2 c. shredded coconut (optional)
Cooking Instructions
Sift dry ingredients together in a large bowl. Make a well in the middle and place all other ingredients into the well. Mix thoroughly. Pour into a greased 9x5 inch loaf pan and let stand for 20 minutes. Bake at 350 degrees for 45 minutes to an hour, or until the top is nicely browned, and a skewer pushed through the middle of the loaf comes out clean or with only a few crumbs.
Additional Comments
This is a quick bread that's good to make if you have mangoes and bananas that have overripened. The bread is moist and would taste great warmed up with some cream cheese spread on top, or with a scoop of coconut icecream on top.
