Pork w/ Shrimp & Mung beans

5 lbs Pork (any kine)
1 Onion
5 cloves Garlic
1 large piece of fresh Ginger
Salt and pepper (black or white)
1 lbs fresh or dried (ebei)Shrimp
2 Bay leaves
1 lb dried Mung beans
Cooking Instructions
Slice onion & garlic. Peel and slice ginger into small slivers, reserve half of ginger. Wash & rinse mung beans. Bring to a boil beans & 1/2 of ginger w/ about 1 inch of water above the level of beans then simmer approx. 15 mins. Cut pork and saute w/ onions, garlic, bay leaves and remaining ginger. Add shrimp and beans(water & all). Bring to boil then simmer 45 mins. Add salt and pepper to taste. Serve on fresh rice.
Additional Comments
Keep an eye on the beans as they simmer. They will plump up & soak up the water. Add water to keep the level the same as the beans. If using dried Ebei, soak in 1 cup of water until the shrimp are rehydrated. Drain and add. If you want this dish spicy add more ginger and garlic w/ white pepper instead of black.

This is one of my comfort foods from small kid time. Southerners on the Mainland will aquire a taste to this dish if introduced.
