Filipino Pancakes

2 C Flour
4 Tbsp sugar
1-1 1/2 Tbsp Baking powder
2 large Eggs
1 - 1 1/2 C Milk. Evaporated milk diluted with water can be used if regular milk is not available.
Cooking Instructions
In large bowl mix the first 3 ingredients. In a small bowl beat eggs and milk together. Add this mixture to dry ingredients and mix until batter is smooth. Just make sure that the batter is not too thick. Heat griddle or 10 inch fry pan. Pour batter to form about a 6 inch pancake. Flip when top is bubbly around edge. Cook until pancake is golden brown.

This is a recipe that my Apo(grandfather)made for us on weekends that we spent at their home.
