Tripe Stew

2 lbs Tripe
Baking soda
1 Onion
2-3 Potatos
4-6 Carrots
2 stalks Celery
1 pkg Lipton onion soup
1 can Tomato paste
Garlic (if desired)
Salt and pepper to taste
3 Bay leafs
Cooking Instructions
In a pot, cover tripe with water, and add 1 tablespoon of baking soda, boil for 30 minutes. Drain. Repeat process 2 more times, adding baking soda each time. Now that the tripe has been "sterilized", you can continue with stewing. Cover tripe with water, and add onions and celery (and garlic if desired) and Lipton onion soup mix. Simmer on medium for about 30-45 minutes. Add potatoes and carrots and let simmer on medium until potatoes and carrots are at desired tenderness. Add tomato paste and simmer for additional 10 minutes. If a thicker consistency is desired, stew can be thickened with cornstarch.
Additional Comments
Tripe stew always seems to taste better the second day, so if you decide to thicken the stew, keep in mind that the second day it will be much thicker.
