Spam Patties

1-2 cans Spam (mashed fine)
6 lg Eggs
1 lg round Onion (diced)
Dash of garlic salt (or to taste)
1 tsp Black pepper (or to taste)
1/4 C Milk or water
Cooking Instructions
Mash Spam in a large bowl with a potato masher, until it looks like hash. Add diced onions, garlic salt, black pepper, and eggs. Mix very well; if egg mixture is a little to thick for your taste... just add a little milk or water to thin it out. Heat oil in a cast iron skillet; use a ladle to pour mixture into hot pan; you can fit 2 patties at a time in a regular sized skillet. Cook until each pattie has brown edges and firm; then flip over to cook other side. Continue with the rest of mixture, until you have at least 8 or 10 or more individual patties. Very Ono with hot rice, cole slaw, mac salad, or fresh water cress with shoyu/mayo dressing.

Mom always made this dish when we were growing up in Kaneohe. This was my Dad's most favorite meal. Now it's our family classic dish. Just simple grind'z.
