Sin Choy w/ Ika

Ingredients
1/2 lb Squid
3 Tbsp Oil
2 cloves Garlic, minced
1 Round onion, sliced
1 C Sin choy
2 tsp Ginger, minced
Sauce:
1 tsp Vinegar
1/2 C Beef broth
1 tsp Sugar
1-1/2 Tbsp Cornstarch
1/2 C Water
Sesame seeds
Cooking Instructions
Clean squid, slice body into rings & legs into 2" lengths or leave head/legs whole if small. Heat 2 Tbs. oil & stir-fry squid on high heat, remove. Reheat pan w/ 1 Tbs. oil, add garlic, ginger & onion, sauté vegetables until tender but crisp. Add sin choy, then add sauce & stir well until thickened. Return squid & stir well, sprinkle w/ sesame seeds.
