Shrimp and Pineapple Fried Rice

1 C Pineapple, chopped
1/2 C Pineapple juice
5 C Cooked rice
2 lbs medium Shrimp (peeled and deveined)
1/4 C Soy sauce
Canola oil
1 tsp Salt
1 bunch Green onions, chopped
Cooking Instructions
In a large skillet or wok, add 2 Tbsp canola oil and add shrimp. Cook for 3 minutes on high heat. Stir in pineapple and rice. Stir constantly for 5 minutes. Mix in soy sauce, salt and pineapple juice. Add more as necessary. Cook for 10 minutes. Remove from pan to a hot platter. Sprinkle green onions over the top and garnish the platter with pineapple slices if desired.
