Pork Threads In Hot Garlic Sauce

2 Tbsp Vegetable oil
1/2 lb Pork, cut into 1-inch-long matchsticks
1/4 lb Mushrooms, or bamboo shoots, or carrots, cut into the same size as the pork
1 Tbsp Chinese chile sauce (crushed chiles in oil) or crushed dried red chile peppers
1 Tbsp Fresh ginger, minced
2 Tbsp Garlic, minced
2 Tbsps Soy sauce
2 tsp Brown sugar, dissolved in the soy sauce
1 tsp Chinese or white vinegar
2 Scallions, chopped
1 tsp Cornstarch
Cooking Instructions
Heat the wok, then heat the oil in it. Brown the pork, then remove and reserve. Stir-fry the vegetables for 1 min. Add the chile sauce, ginger and garlic, and stir-fry for another 30 seconds. Add the soy sauce, sugar, vinegar, reserved pork, and scallions. Mix, lower the heat, cover, and simmer for 2-3 minutes. If desired, thicken the sauce by adding cornstarch (dissolved in a little water to make a paste). Serve with steamed rice. Serves
