Plate Lunch Garlic Chicken

Ingredients
Vegetable oil for deep-frying
3 lbs Boneless chicken thighs, cut in bite-sized pieces
Salt and pepper to taste
1/2 C Flour
1/2 C Cornstarch
2 pinches Baking powder
Garlic Sauce:
1/3 C Soy sauce
1/3 C Sugar
1 Tbsp Mirin
10 cloves Garlic, minced
Dash Togarashi (Japanese chili pepper powder)
Cooking Instructions
Combine all sauce ingredients and heat on the stovetop until sugar melts. Set aside. Heat oil to 350 degrees. Season chicken with salt and pepper. Stir together flour, cornstarch, and baking powder in a bowl. Add the chicken pieces and let sit overnight in the refrigerator. Fry pieces in hot oil, then dip in garlic sauce.
